Case of the Mondays

Top of the morning. Start off with a little food, found this and thought it might be useful to some Rebs out there in cyber space.

Yocona River Inn Steak Sauce

1/2 cup molasses

1 cup red wine

1/3 balsamic vinegar

1/4 cup Worcestershire Sauce

Reduce the above and then add 1 stick of melted butter.

I have yet to try it so I can't say yay or nay to it, just thought I would Pass it along.

Next .... For all of you out there looking to cook dinner sometime this week, I got a quick and easy recipie for you.

-Grocery List --
1 - 18 oz can of Tomato Basil sauce
1 - Box of Sprial Pasta or any Pasta
2 - Tomatos Diced
1/2 Red Onion Diced
1- Bell Pepper Diced
1 -- Zuccini Cut in rounds thinly
3 -- Cloves Garlic Diced
Spices/Herbs
Oregano, Thyme, Fresh Cracked Pepper, Sea Salt, Basil, Season Salt (Herbs fresh if possible)


Boil Pasta -- If you need help with that, then continue eating out and disregard this.

In a decent sized sauce pan/skillet/fry pan/whatever you have -- over medium high heat add about 2 ounces of Extra Virgin Olive Oil.

Once you have diced the tomato, red onion, garlic, zuccini, bell pepper add to a mixing bowl and add spices. You will have to eye it here folks, I don't do measurements, I eye everything so you will too. Then transfer from mixing bowl to the skillet/pan/whatever. Stir. Should take about 10 minuetes. Everything is cooked so you don't have to worry about getting this to a certain temperature.

If you want to add grilled chicken --

Grab a mixing bowl, your chicken, EVOO, Fresh Cracked Pepper, Sea Salt, Fresh Rosemary, Oregano, Thyme and some dried italian seasoning combine and add about 2-3 oz of Chardonay/Sauvingon Blanc/White Wine and mix with your hands. Wash Hands, and the internal temp of the chicken when you take it off the grill should read 155 degrees. The chicken will continue to cook and the last thing you want is rubber chicken, and a lot of you probably eat rubber chicken, steak, pork or beef on a regular basis. Why? Well for starters, you don't own a meat thermometer. Go buy one. Otherwise you will be left leaving whatever you are cooking on the grill to long or not long enough. Also, you kids open the grill and let the heat out way to much. Flip any item only 4 times, leave it alone, let it work its magic. And by all means, NEVER press a piece of meat on the grill with a spatula thinking you are doing something right, you are releasing all the juices from the meat when you do that and if I catch you doing it I will give you a quick puch to the jugular for being a idiot. O and also, please dont use the same bowl/plate in which you had raw meat on to place your cooked meat. Go clean it and come back, I don't wanna get sick at your cook out.

Here is a video to help some of you out with your knife skills, and when you are at William Sonoma/Target/Bed Bath Beyond buying your meat thermometer for gods sake buy a decent chef/utility knife. You don't play golf with shitty clubs do you? Or have a crappy purse for you ladies out there, so show a little cooking savy and purchase a good piece of cutlery.

The Rebs lost to LSU in basketball Saturday.....Next.

Matt Kenseth won the Daytona 500. Tim Tebow was seen sitting next to Steve Spurrier at the race. Pretty sweet I guess.

I was a loser and did nothing on Valentines Day. While some of you clowns took your hot dates to Red Lobster/Outback Steakhouse/Olive Garden thinking it would be romanitc and sweet. You know Goodman Road in Southaven was packed (AKA Skid Row) with all the fine, fine people of the area flooding the chains. I had Flying Fish Downtown .... It was good, I ususally get the fish tacos but got the Grilled Red Snapper with a Crawfish Chowder. All good except the Chowder was served cold, not intentionally either. O well I was hungry and I don't really ever complain or send things back at a restaurant unless things are just out of hand because once you are on the other side of things you understand how hectic things can get. It was good to see downtown Memphis alive though.

Well more to come later today, off to do some work.
